It is not true that things are stored on your hard drive forever. What happens is this: When you delete a file from your computer it simply marks that area of the hard drive as empty, but the file is still there. You can retrieve it with certain programs like Undelete.
However, there is a time limit on this. Your computer is constantly writing things to the hard drive. If that ‘Area’ of the hard drive that had the file gets written over with something else (remember the harddrive thinks that area is empty), then it is gone forever.
This is how permanent data erasers work. They delete the files you want to delete, rewrite over the area the files were stored on so that they can not be retrieved and delete the temporary files it used to rewrite over that area. These programs will do that x number of times that the user defines. I believe the FBI uses a program that does this 7 times – and defines that as being impossible to recover.
However, one rewrite is enough, for all intensive purposes, to never be able to recover it via software by yourself. It could possibly be retrieved by a service that you mail your hard drive into and they dissect it in a clean room and physically find the sector the data was stored on and recover it. However this will cost you hundreds of dollars, so I doubt you want that.
